Professional Cookery
Apprentice chefs in many of Queensland's top restaurants train at Southbank Institute of Technology. Here they progress from a solid foundation in basic cookery methods and food preparation to advanced techniques and management studies.
Students learn:

Providing high technical expertise to advance towards becoming a Chef Patissier, the College of Tourism and Hospitality offers a pre-trade program and an advanced trade qualification in patisserie. Whilst perfecting your kitchen skills and turning your talent into fine art with chocolate making and sugar sculpting you will develop your ability to work efficiently in a wide variety of commercial food outlets across the hospitality industry.
Designed for already qualified and experienced chefs Southbank Institute now presents two Vocational Graduate Qualifications. Offering a Vocational Graduate Certificate in Culinary Arts and Kitchen Management and a corresponding Vocational Graduate Diploma, these programs aim to provide management-level knowledge and skills in business, marketing, human resources, finance and entrepreneurship.
